Lunch fit for royalty. And the rest of us.

Kale and sweet potato enchiladas with chipotle cashew cream. Easy to make, easier still to enjoy.

  2. Hi Ani. I don’t have exact amounts, but this will get you in the ballpark : Filling is 1/4 inch diced cooked sweet potato mixed with black kale, about 50/50. Salted and peppered, drizzle of olive oil to make the kale wilt.

    Heat your corn tortillas in oil or a toaster to soften. Roll with the filling.

    The cashews are soaked for 4 hours and blended in the Vitamix with 1 T minced chipotle in adobo sauce. Pour sauce over, bake for 30 minutes at 350F.

    The dark sauce drizzled over is a fig balsamic reduction, just for a little acidity. Top with a few diced onions.
